Potato Skins

4 large baking potatoes, baked3 Tbs butter or margarine, melted3/4 cup cheddar cheese, shredded2 slices bacon crumbled
Cut potatoes in half lengthwise. Scoop out centers, leaving 1/4-inch shell. Reserve centers for later use.
Cut shells in half crosswise. Place on cookie sheet, skin-side down. Brush with butter. Bake at 450 degrees for 20 to 25 minutes or until crisp and golden brown.
Top with remaining ingredients and continue baking until cheese begins to melt.
Can be served with sour cream.
Makes 16 servings.
