Walnut Refrigerator Cookies

1-3/4 cup California walnuts2 cups all-purpose flour1 cup butter, softened1/2 cup sugar1/2 cup light brown sugar, packed1 tsp vanilla extract1/4 tsp salt1/4 tsp baking soda1 egg
Finely chop 1 cup walnuts. Reserve remaining walnuts for garnish.
Measure flour and remaining ingredients except nuts into large bowl. Beat with mixer at low speed until blended. Stir in chopped nuts.
Roll dough on waxed paper into three 5-inch long rolls, wrap each in waxed paper. Refrigerate 2 hours until firm enough to slice. Store up to one week in refrigerator. Slice into 1/4-inch slices. Place on greased cookie sheet and press walnut into top of each cookie.
Bake at 350 degrees for 8 to 10 minutes until lightly browned.
