Quinoa Salad

1 box Quinoa (about 8 servings)4 c vegetable broth2 T lemon juice2 T olive oilCayenne pepper (to taste)Lemon Pepper (to taste)Salt (to taste)Pepper (to taste)4 garlic cloves, divided2 large red bell peppers1/2 large onion (red or sweet)3 scallions3 carrots1 can back beans, drained and rinsed
Cook quinoa according to package directions substituting veggie broth for water. Meanwhile, combine lime juice, olive oil, lemon pepper, cayenne, salt, pepper, and two cloves garlic (minced). Wisk to combine. Pour over cooked quinoa and stir well.
Chop all vegetables plus remaining two cloves garlic (or more according to taste). Add veggies and black beans to quinoa. Mix well. Serve warm or cold.
