Low Fat Cheddar Cheese and Ham Risotto

Ingredients
1 Tbsp olive oil1 large onion, cubed2 Celery Ribs, cubed2 cloves garlic, minced1 lb Arborio rice1 cup lean smoked ham 1 tbsp thyme leaves6 - 8 cups low fat chicken broth, warmed2 cups low fat cheddar cheesesalt and pepper to taste
Directions
1. Heat olive oil in non-stick pan and cook onions and celery until done. Add garlic and cook for 1 minute.
2. Add rice and saute for 5 minutes on low heat while stirring.
3. Add in ham and thyme and stir.
4. Next, while continously stirring, slowly add chicken stock, 1/2 to 1 cup at a time, cooking until it is absorbed by rice (usually about 2 minutes).
When chicken stock is absorbed, add another 1/2 cup to 1 cup chicken stock.
5. After 15 minutes you can begin to taste the rice for doneness. Rice will begin to take up the chicken stock very slowly or not at all when it is done.

    Umm...when are you supposed to put the cheese in? The end result was good, but I ended up chucking the directions and figuring it out on my own. - 1/20/08

    This was really good although I thought the serving size was a bit small. Be sure to make lots of veggies to go along with this meal. - 12/31/07
