Ingredients
1 tsp fresh thyme1 bay leaf1/4 cup Champagne2 medium mushrooms, chopped2 cups lentils1 tbs Better than Boullion Vegetable BaseBlack Pepper to taste
Directions
Makes 8 servings.

Place all ingredients in a pot. Cover with a generous amount of water; stir.

Bring to a boil, then reduce heat, cover, and simmer for 30 minutes or until the lentils are a texture you like. You need to monitor them to make sure the water doesn't evaporate completely. Add water if needed.
