Sesame Ginger Zucchini Couscous

2 cups water1 medium zucchini1 medium yellow squash2 cups couscous1 clove garlic1 cup diced onion2 tbsp soy sauce1 tsp ginger4tbsp sesame seeds
Makes 8 1-cup servings
1. Bring 2 cups of water to a boil. Steam diced zucchini and squash for five minutes. Set aside and save the water.
2. Add minced garlic and diced onion to water, return to boil. Add couscous and cook per directions (usually remove boiling water from heat and leave covered for five minutes).
3. Add soy sauce and ginger to vegetables
4. Add cooked couscous to vegetables. Sprinkle sesame seeds on top.
