Raw Protein Bars

Ingredients
1 cup soaked almonds 1/2 cup soaked pumpkin seeds1/4 cup flax meal1 cup soaked cranberries1/2 cup fresh coconut or shredded coconut2 TBS raw brown rice protein or 2 TBS raw nut butter1/2 cup raw coconut oil or extra virgin olive oil1 TBS raw agave nectar or honey1.5 tsp pure vanilla extract1/4 cup raw cacao nibs or dark chocolate chips
Directions
Combine soaked nuts and seeds into food processor and pulse till chunky. Add remaining ingredients except cacao nibs and pulse until texture is grainy. Press mixture into 8 x 8 baking dish and top with cacao nibs and push them into mixture. Put into refrigerator for 30 minutes to set up. These freeze well and make about 12 servings depending on your desired thickness.
