Apple, Tomato, cucumber salad

Ingredients
2 fresh Roma (plum) Tomatos, medium1 Cucumber (peeled), 1 large (8-1/4" long)1 cup Shallots, chopped2 Granny Smith Apples, (Medium)1/4 cup Olive Oil1/4 cup Basalmic Vinegar1/2 a packet Good Sense Italian Dressing mix
Directions
Dice cucumber, tomatoes, shallots, and apples and place them in a large bowl. Mix Balsamic vinegar, oil, and Italian dressing mix in a small bowl then pour over diced vegetables and apples. Marinate salad in the refrigerator for 2 hours.

Serve over chopped Romain lettuce, toasted french bread, or alone in a double serving.

Makes 12-1/4 cup servings.
