Cardamom Agave Meringue Cookie

Ingredients
4 Egg whites1.5 tsp Cardamom, ground2 tbsp amber agaveOptional (to help stabilize egg) - 1/2 tsp lemon juice
Directions
Preheat oven to 200 degrees. Line a baking sheet with parchment paper. Use lemon juice around bowl (i.e., pour in, rotate bowl, dump what doesn't stick. This is to help stabilize the egg). Whip egg whites (by hand...but, I gave up and used a mixer on medium low) until soft peaks form. Drizzle agave slowly while eggs are still beating. Add cardamom while still beating. Turn the mixer up to high and beat until stiff peaks form (they look glossier). Drop spoonfuls (or, pipe in bag) onto the parchment paper. Bake for 60 to 90 minutes in the oven (until cookies are completely dried out and feel firm to touch). Remove from oven and let cool completely before removing from sheets.

Serving size depends on size of cookies that are dropped.
