1 cup dry soybeans, soaked overnight and cooked approximately 2 hours1 onion, finely chopped4 garlic cloves, minced1 tablespoon minced fresh parsley1 tablespoon olive oil1 tablespoon miso1 teaspoon tamari
Mash the beans well. Add remaining ingredients and mix well. The mash should be very thick and should hold well when shaped into a ball. Form into patties 3 inches in diameter and 1/2 inch thick and bake on a greased cookie sheet in a moderate oven (350 degrees F) for about 30 minutes. Turn once while baking. Patties are done when they feel solid. They will be crusty on the outside and soft inside. Cool before packaging in plastic ziplock bags or a lidded container.
