Directions
Cantaloupe (or other melon), heirloom tomatoes, cucumber, champagne vinegar, salt & pepper. Drizzle with EVOO.
Blend all ingredients, reserving some chopped vegetables for garnish. Salt & pepper to taste. Refrigerate at least 20 minutes. Top with drizzle of EVOO & some reserved vegetables. Makes three servings.
