Ingredients
5 medium zucchini sliced1 can 16 oz. whole corn (frozen or fresh from the cob will work great)1 can 16 oz. diced potatoes (fresh will also work)1/2 cup chopped onion1-2 Jalapenos diced2 tablespoons butter or corn oil1 cup 2% cheese shreddedSalt and Pepper to taste
Directions
Melt butter in a large saucepan, add onion, zucchini, corn, tomatoes, chile, salt and pepper. Cover and cook over medium heat, 5 to 10 minutes or until zucchini is tender. Add cheese- remove from heat, serve when cheese is melted. Makes 6-8 servings.
