Vegan Meat Sauce

Ingredients
2 tbsp oil1 carrot, chopped1 medium onion, chopped2 stalks celery, chopped1 lb wild mushrooms, chopped4 cloves garlic, minced1 bag Quorn meatless grounds6 oz red wine1 jar tomato pasteBasilParsleySalt and Pepper
Directions
Place oil in a large sauce pan and place over medium high heat.

Add the celery, onion, carrots and mushrooms and cook for about 7 minutes until soft. Add the grounds and cook until thawed. Add the garlic and cook for another 2 minutes. Add the wine and cook until evaporated.

Add the tomato paste and half the basil and parsley.

Add the sugar, salt and pepper to taste.

Stir in the rest of the herbs and serve over whole wheat pasta.
