Gluten Free Banana Chip Muffins

1 1/2 cups gluten free flour blend2 tsp baking powder1 tsp baking soda1/2 tsp salt1 tsp xanthan gum1/2 cup sugar1/2 cup mini chocolate chips1 tsp pure vanilla1/3 cup applesauce, unsweetened1/3 cup canola oil2 eggs2 bananas, mashed (1 cup)
Stir together dry ingredients. Add wet until blended. Bake at 350 for 20-25 minutes.
If you take out the chocolate chips & banana, you have a "based recipe" to make other kinds of muffins - like cranberry, blueberry, carrot etc. We also like double chocolate muffins (add 2 tbsp cocoa powder to the batter, adds about 5 calories per muffin)
Makes 14 muffins, made in the size large muffin cups, filled 2/3-3/4 full. This keeps them from popping up too high in the tins & not fitting in the lunch box containers!
