Ham & Pepper Egg Bake- So Beach Phase 1

Ingredients
Non-stick cooking spray8oz package 98% fat free diced ham1- 12oz bag frozen pepper & onion blend1 tsp chili powder1 tsp cumin1 tsp garlic powder12 medium eggs1 + 1/2 cups 2% shredded Cheddar cheese
Directions
Coat a baking dish with spray. Preheat oven to 350*.

Heat a 12' skillet over med-high heat. Coat with spray. Saute' ham and peppers & onions until all water is evaporated (5mins), add seasonings. Continue to cook until golden brown (2mins). Remove from heat and let cool slightly.

In a mixing bowl beat eggs thoroughly. Add 1 c of cheese and ham and pepper mixture, stir well to combine. Pour into prepared baking dish. Sprinkle remaining cheese on top.

Bake at 350* for 25-35 mins or until center is set and top is golden.

Serve topped with salsa or sour cream if desired (optional)

Makes 6 equal servings.
