Turkey Italian Sausage Ragu

Ingredients
12 oz. turkey italian sausage1 yellow bell pepper diced1 green bell pepper diced1/2 cup chopped onion2 t. tomato paste2 t. garlic, minced1/2 cup dry white wine2 cans diced tomatoes (28 oz.)2 t. sugarred pepper flake (to taste)salt (to taste)serves 4garnish:1/4 cup chopped fresh parsleygrated parmesanserve with:whole wheat penne rigati
Directions
1. Remove sausage from casings. Brown in a large saute pan over medium-high heat for 5 minutes, crushing it into small pieces.
2. Add bell peppers and onions to sausage, brown for 5 more minutes.
3. Stir in tomato paste and garlic. Saute for 2 minutes, stir frequently.
4. Deglaze with wine, then increase heat to high and cook until liquid is nearly evaporated. Add tomatoes, sugar, and pepper flakes; bring to a simmer and cook 5-8 minutes or until thickened.
5. Season with salt. Serve over pasta, garnish with parsley and parmesan.

    I didn't have the green bell pepper nor the dry white wine so I substituted a yellow bell pepper and red wine and it was delicious. - 10/25/07
