Crustless Vegetarian Quiche

Ingredients
1 pat butter1 medium onion, chopped2 cloves garlic, minced1 fresh zucchini, sliced1 cup 2% shredded cheddar cheese4 eggs3 Tablespoons rice flour1 cup milk1/4 teaspoon salt1 Tablespoon fresh parsley1 teaspoon yellow mustard1/4 teaspoon paprika
Directions
Preheat oven to 400 degrees F.

In a skillet, melt butter, add onions, garlic, and zucchini. Cook until onion is translucent and zucchini is beginning to soften.

Lightly grease a pie pan or quiche pan, and spread shredded cheese on the bottom. Top with cooked vegetable mixture.

Combine eggs, flour, milk, salt, parsley, and mustard, mixing well. Pour over vegetable mixture. Sprinkle paprika on top.

Bake for 40-45 minutes until the top is golden brown and the center is set firm. Serves six.

    Tried this out for the first time--it's delicious! The cheese held the base together quite well. I was worried the mustard might taste a bit strong--I don't care for the taste of mustard--but instead it added just a nice tang to the dish. Really simple to prepare, too! - 3/6/13
