Ingredients
Azumaya Extra Firm Lite Tofu, 2.8oz, 5.7 servingNewman's Own Cabernet Marinara Sauce, 2 cupsOlive Oil, 1 tbspOnions, raw, 1 cup, choppedGarlic, 3 tspCarrots, raw, 1 cup, choppedGreen Peppers (bell peppers), 0.75 cup, chopped*artichoke hearts, 0.5 cupSoy sauce (shoyu), low sodium, 2 tbspCapers, 1 tbsp, drained*Worcestershire sauce-vegan, 2 tspbalsamic vinegar, 1 tspOregano, ground, 0.5 tsp*Crushed Red Pepper (a dash), 1 servingBasil, 1 tspParsley, 1 tspSalt, 0.5 tspPepper, black, 0.5 tsp
Directions
Slice tofu lengthwise to form 3 cutlets. grill or roast with soy sauce (Not in calories).
Heat Oil in 3 qt Pot
add onion and garlic, cook 3 minutes
Add Carrots and bell pepper, cook for 10 minutes; add water if needed to prevent sticking.
Add tofu and marinara; reduce heat and simmer for 10 minutes.
Add remaining ingredients and mix well.
