White Bean Dip

Ingredients
1 - 15 oz can Cannellini beans, drained and rinsed2 cloves of garlic2 tablespoons fresh lemon zest (approx 1/2 a lemon)zest of the lemon you juiced3 tbsp. extra virgin olive oil1/4 c loosely packed fresh italian parsley leavesSalt & pepper to taste(I used 1/4 tsp of salt and a couple dashes of Mrs. Dash original)
Directions
Place the beans, garlic, lemon juice & zest, olive oil and parsley in food processor. Pulse until the mixture is coarsely chopped. Season w/ salt & pepper (to reduce the salt I also used a few pinches of Mrs. Dash), to taste.
Serve with Pita chips or lots of cut up fresh veggies!
Makes approx 6, 1/4 cup servings.
