Slow Cooker Sausage & White Bean Soup

1lb sweet Italian sausage, meat pushed out of casings1 TBL olive oil8 oz canned mushrooms1 medium onion, finely chopped1 TBL minced garlic1 14.5 oz can cannellini beans, drained2 TBL tomato paste1 TBL quick-cooking tapioca1 14.5 oz can chicken broth 2 long carrots, scraped and diced1/3 cup grated Parmesan cheese
Makes appx 6 (1 cup) servings.
Warm olive oil in large skillet, add sausage meat, onions and carrots and cook until sausage is browned and onions soft (appx 7 mins). Drain off fat before adding to slow cooker. add all remaining ingredients except the Parmesan. Mix gently until tomato paste dissolves.
Cover and cook on low for 8 hrs. Serve in individual bowls topped with grated Parmesan cheese.
