Pumpkin Tea Bread

1/2 cup butter/margarine (olive oil based)1 1/2 cups of granulated sugar2 eggs1 cup canned pumpkin1 tbsp grated rind of orange or lemon1/4 cup orange or lemon juice---2 1/4 cups of white flour1/2 tsp baking powder2 tsp baking soda1/2 tsp salt1/2 tsp cinnamon1/2 tsp cloves1/2 cup of chopped nuts (optional)1/2 cup of chopped dates (optional)
-Cream butter and sugar. Add one egg and mix. Add the second egg and beat until smooth. Mix pumpkin, rind, and juice into the bowl.
-In a SEPARATE bowl add all remaining ingredients. Pour into batter and stir to moisten only. Do not over-mix otherwise it won't be as fluffy or moist. Pour into a 9x5x3 pan and bake at 350 F (180 C) for an hour or until a toothpick is inserted and comes out clean.
