Denis' Beef Barley & Vegetable Soup

Ingredients
1 cup pearl barley2 cups beef broth or au juice from a roast15 cups water1 bulb garlic2 cups black eyed peas1 cup chopped onions1 cup chopped celery2 cups yellow beans cut in 1 inch pieces2 cups green beans cut in 1 inch pieces2 cups carrots1 pound portabella mushrooms cubed1 cup potatoes cut in bite size pieces1 & 1/2 cups cauliflower cut in bite size pieces2 cups cabbageSalt to your liking (not included in nutrition)
Directions
Rinse barley.
Could barley for 1 hour in 2&1/2 cups of water plus the beef broth.
Add remaining ingredients & simmer for 2 hours.
Add salt on serving.
