Vegetarian Fajita Frittata

Slightly defrost hashbrown potatoes in the microwave for about 2 minutes.
spread on bottom of pie pan.
Layer chopped onions, peppers and corn over potatoes.
Sprinkle cheese on top of veggies.
Beat eggs and half & half together.
Pour egg mixture over cheese. Top with sliced tomatoes.
Let sit for about 10 minutes.
Bake for 45-50 minutes at 400 degrees, until knife in center comes out clean. Let sit about 5 minutes before serving.
