Mushroom consomme

Ingredients
500 gms Sliced mushrooms500 gms diced onionspinch sea saltfreshly ground black pepper
Directions
In a large pan add mushrooms, onion, salt and lemon juice to 4 cups of water. Bring to boil, erduce heat, cover and simmer gently for approx 2 hours. Strain trrhough a colander and return to the pan. Add a little salt and peper to tase, reheat gently. Pout into soup bowls and garnish with shallots, and a few sprigs of watercress. Serves 4.
