Yellow Squash Bisque

Ingredients
2 cups of chicken broth2 lbs of Yellow squash, sliced2 medium onions, sliced8oz carton of sour cream8oz carton of half and half1.5 tsp of salt.5 tsp of white ground pepper
Directions
*Combine fist 3 ingredients in a large Dutch Oven.

*Bring to a boil. Cover, reduce heat, and simmer 8-10 min or until tender. Remove from heat; let cool 10 minutes.

* Pour half of squash mixture into container of an electric blender; process until mixture is smooth, stoping once to scrape down sides. Transfer to a separate container. Repeat the procedure with remaining mixture.

* Returen squash misture to Dutch oven; stire in sour cream and next 3 ingredients.

*cook over low heat, stiring constantly, just untill thoroughly heated, or cover and chill 2 hrs.

*Serve hot or cold.
