Stuffed Cabbage - Turkey

Ingredients
1 Lg Head Cabbage2 lbs Ground Turkey - 97%1 Small Onion - Fine Dice1 Green Bell Pepper - Diced1 c Cooked Brown Rice2 Egg Whites1/2 t Salt1/2 t Pepper2 lbs Saurkraut3 c V8 - Low Sodium
Directions
Cook cabbage leaves a few at a time in boiling water for 5 minutes. Cool in ice water bath, dry, and set aside.

Combine turkey, onion, bell pepper, egg whites, salt, pepper, and brown rice.

Place 1lb saurkraut in bottom of crock pot. Fill cabbage leaves with 1/2 c meat mixture, roll, and place in crock pot. Once filled top off with remaining 1 lb saurkraut and pour V8 over top. Cook on low for 8 hours.
