Miso Soba Noodle Soup

Ingredients
4 Tbsp miso paste4 cups water85 grams soba noodles4.5 oz. extra firm tofu, cut into 1/2 inch cubes1/2 cup scallions, chopped1 tsp sesame oilSalad Booster/sesame seeds, optional
Directions
Bring the water to a boil and add the miso paste. Stir to combine.
Add the soba noodles and cook for 4 minutes, or according to package directions.
Turn the heat off and add the tofu, letting it heat through.
Divide evenly into two bowls and top with sesame oil, scallions, and salad booster.
