Mom's Zucchini Loaf Redux

Ingredients
2 eggs 2 cups sugar 2 cups raw shredded zucchini 2 tsp vanilla 1 cup applesauce 2 cups white flour 1 cup whole wheat flour 3 tsp cinnamon 1 tsp pumpkin pie spice 1 tsp baking soda 1/4 tsp baking powder 1 tsp salt 1/2 cup chopped nuts (walnuts and/or pecans) 1/2 cup chocolate chips (optional)
Directions
Beat eggs until fluffy. Add sugar, zucchini, vanilla and applesauce. Combine dry ingredients and add to zucchini mixture. Stir until blended. Grease & flour two loaf pans. Divide mixture into pans and bake at 325 F for 1 hour. Remove from pan and allow to cool. Slice into approximately 12 portions. Can be frozen.

Instead of the chocolate chips, use a full cup of walnuts or pecans.
