2T olive oil2 Med carrots,chopped1 large onion,chopped1 med celery,chopped1 pound ground beef1 clove garlic minced1(28 ounce) can tomatoes2T tomatoe paste2 tsp sugar3/4 tsp pepper11/4 tsp salt1 tsp beef boullion1 tsp oregano1/4 cup chopped parsley
In lage pot,cook carrots,onion, celery,in oil till tender.
Stir in beef and garlic on high heat.
Cook till juicesevaporate and beef is well browned.
Stir in tomatoes with liquid, paste,sugar, salt, boullion, oregano, and pepper.
Use spoon to break tomatoes.
On high heat bring to a boil.
Reduce to low and simmer 15 minutes. uncovered.
Stir in parsley.
