Shrimp Feta Salad

Ingredients
3/4 cup barley, cooked according to package directions (you can use any grain here – Brown rice, quinoa), cooled½ lb shrimp – peeled, deveined, cooked, chopped2 large cucumbers, peeled, seeds scooped out and diced1 small red onion1 c. chopped sun-dried tomatoes½ cup crumbled feta1/3 cup packed parsley leaves, chopped2 T fresh dill, chopped¼ cup Lemon Juice2T olive oilSalt and pepper
Directions
Mix and eat.

I calculated using 4 servings when I eat this as a main dish salad (I just split the salad into 4 containers).
