Gluten free Zucchini Bread

3 eggs4 oz. unsweetened applesauce1 c. maple syrup grade b 2 c. grated zucchini2 tsp. vanilla extract3 c. gluten free flour3 tsp. ground cinnamon1 tsp. baking soda1/4 tsp. baking powder1 tsp. salt
1. Preheat oven to 325 degrees. Grease and flour two 8x4 inch loaf pans
2. In a large bowl, beat eggs until light and frothy. Mix in applesauce and maple syrup. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, and salt; stir into the egg mixture. Divide batter into prepared pans.
3. Bake for 60 - 70 minutes, or until done.
Makes about 24 servings (12 each pan).
