Spanish Paella

Ingredients
6 oz chicken breast, cubed1 chicken sausage or chorizo, sliced1/2 shrimp1 cup onions, diced1 roma tomato, diced1/2 bell pepper, diced1 carrot, diced1/2 cup green beans3/4 cup long grain rice1 tbsp canola oil1/2 tsp paprika1/2 tsp garlic powder4 strands saffron2 cups chicken broth
Directions
Soak saffron in 2 tbsp warm water. Set aside

Heat oil in a wok, paella pan, or deep dish saute pan. Brown chicken. Set aside. Brown sausage. Set aside. Add onions to pan until soft and tender. Add the rest of the vegetables. Cook until heated. Mix together with chicken and sausage. Add 1 cup chicken broth, saffron, and rice. Bring to a simmer. Cook and stir until rice is tender. Keep adding chicken broth a little at a time to keep the rice moist. When rice is almost done, add shrimp, mix together, and cover the pan. Serve when shrimp is pink and cooked through.
