Simple French Potato Salad

1 1/2 Lb. Yukon Gold Potatoes4 T. Red Wine Vinegar2 T. Extra Virgin Olive Oil2 shallots or 1/2 Small Onion, finely diced1 T Dijon Mustard1/2 t. Dried Thyme1/2 t. Dried ParsleySalt and Pepper to Taste
Wash potatoes and half or quarter them depending on size. Boil for approximately 20 min. or until tender.
Dice onion and mix dressing while potatoes are cooking.
Pour dressing over warm potatoes, tossing gently until potatoes are well-coated.
Serve warm or let cool. Refrigerate leftovers.

thought it would be wierd because of the sauce on the hot potatoes, but that actually made the texture really creamy and nice. i tweeked it a bit with less oil and pickle juice instead of vinegar, but it would have been great regardless.
