Light Cranberry Chicken Salad

2 (12.5oz) Cans Chunk Chicken Breast in Water1/2 cup of LIGHT mayo (8 tablespoons)6 Green Onions (Or a small Bunch)3 stalks of Celery 2/3 Cups Dried CranberriesSalt & Freshly Cracked Pepper to taste---Makes 8 servings---
In a large bowl:
1. Chop Green Onions & Celery to desired size, and add to bowl.
2. Drain chicken and add to bowl
3. Measure out dried cranberries and add to bowl.
4. Measure out mayo and add to bowl.
5. Add (kosher) salt and freshly cracked Pepper to taste
6. Mix thoroughly while "un-chunking" the chicken in the process.
This Divides into 8 Servings (Approx 1/2 Cup each). Serve on wheat bread, or eat in lettuce leaves..... etc.
Best when made the day before so the flavors mix and the cranberry infuses the mixture.
