Cold Broccoli Soup

Ingredients
3 bunches of broccoli (approx. 1.5 lbs), coarsely chopped2 - 13 oz. cans of chicken broth1 medium onion, coarsely chopped1/2 t. curry powder1/4 t. black pepper1 T. lemon juice
Directions
Combine all ingredients except lemon juice in a large pot. Simmer for about 35 - 45 minutes or until the broccoli is very tender. Use an immersion blender or regular blender to blend the soup until creamy and smooth. Stir in the lemon juice and serve. Makes 6 (approximately 1.5 cup) servings.
