Simple Vegetarian Chili

2 Tbs extra virgin olive oilone medium yellow onionone small red pepperone medium zucchini large can diced tomatoescan dark red kidney beans (rinsed)can chili beanscan corn (rinsed)2 Tbs chili powdercan easily be adjusted with dried beans and/or low sodium options, if you choose. This is just a lot faster for me when I'm busy and want something comforting and hot.
chop into small peices:
one medium yellow onion
one small red bell pepper
one medium zucchini
cook in a couple of tablespoons of extra virgin olive oil until softened.
add large can of diced tomatoes, rinsed red kidney beans, chili beans, and half a can of rinsed corn.
stir in 2 tablespoons of chili powder - or to taste.
cook - stirring regularly until you're ready to eat.
good with a little shredded cheese and low fat sour cream
