One deep dish 9 inch pie shell, prebaked about 8 min.1/2 c. light mayonnaise (regular mayo is fine, too)2/3 c. milk (non fat is fine, I use 2%)3 lg. eggs1 T. cornstarch1 1/2 c. your favorite cheese (lowfat is fine) shredded1/2 c. bacon, ham or sausage1/3 c. chopped onion, microwave 2 min, drain1/2 c. chopped mushrooms, micro 2 min, drainAdd other vegetables as desired...I use about 1 cup raw chopped spinach, or 1/4 pkg frozen, thawed and drained.The trick to the perfect texture is to squeeze the excess liquid from the mushrooms and onions and the spinach if you use frozen. I like to use a cheesecloth and just squeeze the liquid out. Mix all ingredients, pour into pie shell, and bake at 325 degrees for 45 minutes or until firm. Let stand 5 minutes before serving.
