stir fry chicken and green beans

Ingredients
20 oz chicken breast, cubed3 cups green snap beans1 red bell pepper cut in strips1 green bell pepper cut in strips1/2 cup cashews, chopped3tsp canola oil, divided2tsp sesame oil divided6 tsp ginger root, chopped finely4 cloves garlic, minced3 Tbsp soy sauce1 cup chicken broth1/2 ounce corn starchoriental spice to taste (I buy special spice at the oriental food store)
Directions
Makes 4 servings, approx 2 cups.

1. Heat large nonstick skillet over high heat. Add 1 tsp canola oil, 1 tsp sesame oil, garlic and ginger, cook 15 seconds Add chicken and stir-fry 3-4 minutes, remove to plate. In medium saucepan, place green beans in water and boil 3-4 minutes, immediately place in cold water.

2.Add remaining canola oil to skillet, drain green beans and add to skillet. stir-fry for 3 minutes then add bell peppers. cook for 3 minutes more

3. mix soy sauce, chicken broth and corn starch in small sauce pan and simmer. add chicken and remaining sesame oil back to skillet and cook 3 more min, add chicken broth mixture, oriental spice and cashews, mix well and serve over rice.
