Sausage & Kale Soup

1 1/2 Lb Sausage, sweet or hot, cut into 1/2" slices1 Lb Kale, fresh washed (or 1 Lb frozen chopped Kale)1 Cup yellow onion, finely chopped4 to 6 cloves garlic, finely chopped2 Tbsp oil from sausage2 Tbsp butter2 Quarts chicken broth16 oz can white beans (cannellini), rinsedBlack pepperSalt
If using fresh kale, strip the leaves from the washed kale & cut diagonally into wide slices. If using frozen open bag & set aside.
In a medium stock pot (or large sauce pot) add cut sausage. When done pour into bowl & set aside, leaving 2 tbsp of oil from cooking sausage in pan.
Add butter, saute' onions & garlic for a couple minutes. Add beans. Cook a few more minutes.
Add the kale & cooked sausage. Simmer for an additional 5 - 10 minutes. Add salt & pepper to taste.
Serve with fresh bread & parmesan cheese.
Optional: May add potatoes, yummier but not as healthy.
