Thai Tofu and Veggies

Ingredients
Tofu, firm, 1 block cubedScallions, raw, 1 large 2 Potatos, cubedSoy Sauce or aminos, 1 tbsp Garlic, 3 clove Olive Oil, 1 tbsp Thai Coconut Milk, 1 canButternut SquashBroccoli, fresh, 2 bunch
Directions
Brown tofu in a frying pan.
Sautee garlic, scallions, aminos, and oil
Pour in coconut milk to sautee and add veggies, simmer for 10 min.
Serve with tofu on top.
