Ingredients

    8 ounces whole-wheat baguette, sliced into 8 (1-inch) pieces
    2 avocados, pit removed
    juice of 1 lime
    1 large ripe tomato, diced, excess juice discarded
    2 extra thin slices sweet onion, cut into quarters (see photo)
    salt and pepper

Directions

Preheat the oven to 350 F.
Spread the baguette slices on a baking sheet. Bake 8-10 minutes, turning halfway through, until the bread is toasted.
Meanwhile, mash the avocados with the juice of one lime (about two tablespoons) and a pinch each of salt and pepper.
Spread the avocado mixture on top of the baguette slices (1 heaping tablespoon per slice). Top with a couple of pieces of onion and a few chunks of tomato. Sprinkle with a pinch of salt and pepper.
Serve immediately.

Serving Size: 8 servings; 1 slice each

    I really like this for a chic appetizer. I think I will try making bread crisps next time (baguette slices rubbed with garlic on both sides, baked for 10 min at 350) and a sprig of cilantro on top :-) - 4/7/14

    So tasty and easy to prepare. I used a two ounce slice of Tuscany bread and counted it as two servings. Easy to adapt recipe for one person. Used half a lemon and a small avocado. Mashed with pastry blender. Saved half of the mixture and diced tomato and onion for next day for another tasty treat!

    .. I had something like this, this morning for breakfast...whole wheat toast, I/2 mushed up avocado, paprika, a little lemon, and 1 Tab of feta. sliced tomatoe on top.... very satisfying. - 4/22/16
