However, I tossed it all in the crock pot and let simmer all day...adding the spinach just before serving.

Great hearty soup to warm you up in the winter, but light enough to not slow you down! The smell alone of this soup will have everyone drooling. Just leave out the sausage and you have a great, protein rich, VEGETARIAN option!!!!

A yummy and filling soup, perfect for those chilly fall nights. While completely satisfying alone, this soup is also delicious paired with a piece of crusty whole grain bread. Or if you prefer, include some whole wheat pasta or brown rice instead. Add a crisp, colorful tossed salad and you've got yourself a meal!

I got the basis of this recipe from Epicurious and made a few alterations to make it what it is. There are healthier versions, but oh well, this is yummy and not too bad nutritionally :)
