Chilaquiles

Ingredients
2 tbsp. veggie oil2 c. chopped onion2 bell peppers, chopped 8 corn tortillas, baked and broken into pieces, or a med. bag of tortilla chips (my preference)4 c. refried beans1/3 cup chopped Spanish olives (opt)2 cups hot sauce (I use chunky salsa)1 c. grated sharp cheddar
Directions
Saute onions and peppers until translucent.
Grease 9x13 pan, line pan with tortillas.
Add refried beans in a layer on top of tortillas.
Add sauted vegetables.
Add olives, if using (please do!)
Add salsa, and top with cheese.
Bake covered at 375F for 25-35 min, uncover and bake another 10 min, or until cheese is blubbly.

    I really liked this recipe. Very easy to prepare and pop into the oven. I didn't make it very spicy as I am the only one who likes a bite back. I used mild salsa and it was still very tasty. - 8/27/07
