16 - 20 oz dry beans, your choice32 oz stock chicken or vegetable28 oz whole tomatoes1 oz olive oil1/2 cup each bell pepper,onion,celery, chopped evenly16 oz sausage turkey is bestsalt, pepper, I use a healthy dose if "Slap Yo Mama " mix
In 6 quart stock pot or 5 quart slow cooker, (set on high) beans,stock, and 1 quart water. Bring to simmer , cook 1 hour. In saute pan heat olive oil , add pepper,celery, onion, cook till tender and fragrent add sliced sausage and heat thru, set aside until beans are starting to soften. Add tomatoes, sausage saute' , clamp on a lid let simmer for at least 2 hours, but all day or overnight is okay. Depending on who eats a serving 1 - 2 cups. Makes 8 generous servings
