Beef Enchiladas

Ingredients
1.5lbs lean ground beef28 oz enchilada sauce1 large tomato, diced14 corn tortillas
Directions
Cut up the tomato and the tortillas. Brown the lean ground beef in a skillet. Drain any fat. Add the rest of the ingredients to the beef. Cover and let cook for 20 minutes on low/medium heat. Add a little water if it gets too dry. Enjoy.
Makes 8 servings

*For extra flavour add any vegetables that you want. I prefer to put them through a grater first.
