Introduction

Great for tacos, enchiladas or served as a sandwich with some added BBQ Sauce. Great for tacos, enchiladas or served as a sandwich with some added BBQ Sauce.

Ingredients

    2.5 pound Pork Roast
    1 can Tomatoes with diced green chiles
    1 small can diced green chiles
    2 Tsp. Taco Seasoning
    1 Tsp. Cayenne pepper or to taste
    3 cloves of garlic; minced
    1/2 cup chopped onion

Directions

Place 1 can of tomatoes with diced green chiles on the bottom of your slow cooker. Place pork roast on top. Mix can of green chiles with the other ingredients and slather on top of the roast. Place slow cooker on low for about 8 hours. Shred pork (should happen very easily), then place back in slow cooker and mix with the juices. Can be used for tacos, enchiladas, sandwiches.

    This is yummy......I didn't have any Cayenne pepper on hand so I used a Tbsp or so of chili powder. As for the comment about slimy meat......perhaps you used a really fatty cut of pork? I bought a pork shoulder and trimmed almost all the visible fat.....not slimy at all! I will make this again! - 9/21/10

    This was amazing we used in as tacos one night and enchiladas another and then again on top of baked potatos. Definately a keeper - 5/3/11

    WOW!!! This dish is amazing!! Even my 7 yr old loves it! Try pan frying it adding juices, NOT oil, for a crispier meat! Really good on salad with plain and very little taco sauce! Thanks for sharing this recipe! Def a keeper! - 2/4/11

    Delicious! I used the amount of cayenne in the recipe and it made it a little spicy. I LOVE spicy food, but if others don't I would reccommend a little less cayenne. I wrapped it in tortillas for dinner with some black beans. First time cooking pork for me and it was a success! - 10/11/09
