Spanish Chicken and Rice

Ingredients
2 boneless skinless chicken breast halves (or 1 set)2 C brown rice, uncooked1/2 C chopped fresh cilantro1 small onion, coarsely chopped1/4 lb. fresh mushrooms, coarsely chopped1 (15-oz.) can yellow sweet corn1 (15-oz.) can beans in chili sauce1/3 C enchilada sauce2 1/4 C water
Directions
1. pre-heat oven to 350 degrees F

2. dice chicken, and chop other ingredients.

3. combine all ingredients in a casserole dish

4. bake for an hour, or until rice and chicken are done.
