Easy Potato Soup

Ingredients
2 large potatoes, cubed1 med. carrot, shredded1 scant cup water1 large onion, diced1 pint 1% milk, scaldedSalt to tasteHot red pepper or black pepper, if desired1 T. butter or margarine
Directions
Cook potato and shredded carrots in 1 scant cup of water until soft, about 30 minutes. If desired mash altogether. Saute onion in butter or margarine. Scald milk and add cooked potato, carrots and onions. Let simmer a few minutes. Serves 4
