1 Can Cream of Mushroom8 Red Potatoes, Quartered1 Can Cream of Chicken1 Large or 2 Small Cans Evaporated Milk1 Medium Red Onion8 Slices Bacon1.5 Cups Shredded Cheddar or Colby Jack Cheese
Makes (10) 1-Cup Servings
Saute onion and bacon until soft. Meanwhile, boil quartered potatoes until pierced easily with a fork. Drain the water from potatoes, leaving enough water to cover them. Add soup, evaporated milk, cheese, and sautee mixture. Season with salt and pepper to taste. Let cook 15-30 minutes to near desired thickness. Remove from heat and let stand until soup is desired consistency.
