Fajitas w/ Fresh Pico de Gallo

Ingredients
3 bonesless skinless chicken breasts1 red pepper1 green pepper1 1/2 medium onionsChipotle seasoning (Pampered Chef or other)Low Fat Sour CreamShredded Cheese6" low fat whole wheat tortillaPico de Gallo4 roma/plum tomatoes1/2 med onion 1/4 c. fresh cilantro, finely chopped1 lime, juice only1 jalapeno, optional
Directions
Flatten Chicken breat to even thickness. Slice in strips.

Slice onion, red pepper and green pepper. Place onion and peppers in bottom of deep dish baker. Sprinkle with 1 Tbsp chipotle seasoning. Layer chicken strips over vegetables. Sprinkle with 1 Tbsp chipotle seasoning. Cover. Microwave on high for 15 minutes, or until chicken is cooked.

Pico de Gallo
Core, seed and chop tomatoes. Place chopped tomatoes in small mixing bowl. Chop onion, add to tomatoes. Add cilantro, finely chopped. Add juice of lime. Mix well. Add salt & pepper to taste. Add jalapeno to taste (remember heat is in the membrane & seeds - add to taste).

Serve on 6" tortilla, top with 1/8 cup shredded cheddar, t Tbsp Pico de Gallo and 1 Tbsp sour cream.
